Spiced Grilled Chicken
Pop it under the broiler
Ingredients:
- 1 whole chicken (cut into pieces) or 4 whole chicken breasts
- 2 tbsp olive oil
- 1 tbsp melted butter
- 1 tbsp lemon juice
- 2 garlic cloves (minced)
- 1 tsp smoked paprika
- 1 tsp honey (for glaze)
- 1 tsp ground coriander
- ½ tsp chili powder (optional)
- ½ tsp cumin
- ½ tsp black pepper
- ½ tsp salt
Method:
- Mix the marinade: In a bowl, whisk together olive oil, melted butter, lemon juice, honey, garlic, and all spices thoroughly.
- Marinate the chicken: Coat the chicken pieces generously with the marinade. Let it rest in the fridge for 1 hour (this lets the flavors soak in!).
- Sear it up: Heat a skillet on medium heat. Add the chicken and sear until golden-brown on all sides.
- Cook low & slow: Reduce the heat to low, cover the skillet, and let it cook through (flip occasionally to avoid burning).
- Glaze for shine: In the last 5 minutes, brush the chicken with leftover honey-butter mix. Let it caramelize for that gorgeous glossy finish.
- Grill hack: Want extra char? Pop it under the broiler for 5 minutes—but watch closely to avoid over-browning!
- Serve hot: Pair with warm pita bread, tahini salad, and dig in!
