Spiced Grilled Chicken

Pop it under the broiler

Ingredients:

  • 1 whole chicken (cut into pieces) or 4 whole chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp melted butter
  • 1 tbsp lemon juice
  • 2 garlic cloves (minced)
  • 1 tsp smoked paprika
  • 1 tsp honey (for glaze)
  • 1 tsp ground coriander
  • ½ tsp chili powder (optional)
  • ½ tsp cumin
  • ½ tsp black pepper
  • ½ tsp salt

Method:

  1. Mix the marinade: In a bowl, whisk together olive oil, melted butter, lemon juice, honey, garlic, and all spices thoroughly.
  2. Marinate the chicken: Coat the chicken pieces generously with the marinade. Let it rest in the fridge for 1 hour (this lets the flavors soak in!).
  3. Sear it up: Heat a skillet on medium heat. Add the chicken and sear until golden-brown on all sides.
  4. Cook low & slow: Reduce the heat to low, cover the skillet, and let it cook through (flip occasionally to avoid burning).
  5. Glaze for shine: In the last 5 minutes, brush the chicken with leftover honey-butter mix. Let it caramelize for that gorgeous glossy finish.
  6. Grill hack: Want extra char? Pop it under the broiler for 5 minutes—but watch closely to avoid over-browning!
  7. Serve hot: Pair with warm pita bread, tahini salad, and dig in!
